These are without a doubt the best cookies EVER!!!
This cookie recipe was inspired by Tanya Burr after watching her baking video on youtube and they are so incredible that I now bake them on a weekly basis.
When kike and I are going to have a nice relaxing evening in I now bake these cookies as our treat. They are super quick and super easy!
RECIPE
You will need:
200g Butter
300g Caster Sugar
325g Self~raising Flour
1 Large Egg
200g White Chocolate
200g Milk Chocolate
Dash of milk (optional)
(If you don't have self~raising flour use normal flour and add a couple of tsbs or 1 sachet of baking powder.)
You will also need:
2 Baking Trays with baking paper
Electric Whisk
1 Butter Knife
Mixing Bowl
Kitchen Scales
Lets get started!!
*Ideally you first want to put on an apron, set your oven to 200 degrees celsius and line 2 baking trays with baking paper or aluminium foil and put them to one side for later.
*Then you want to whisk the butter and sugar together until it is a smooth consistency. It is easier if the butter is already soft at room temperature.
*Next you want to crack in the egg and whisk again.
*Then you want to add the flour. Start by adding half of the flour first and whisk the mixture together, then add the second half and whisk again until it looks something like this ....
(If your mixture is too dry, add a tiny dash of milk.)
Now for the best part .... CHOCOLATE!
*Just simply break up all the chocolate and throw it into the mixture.
*Then with clean hands fold all the chocolate pieces into the cookie dough, making sure you get right underneath the dough so you have chocolate pieces throughout.
*Once you have mixed the chocolate in nicely, use your hands to separate the mixture into about 10 patties/balls/blobs hehe! Roughly the size of the palm of your hand, just aim for 10 even patties.
*Put 5 patties on each tray with a good amount of space between them as they do expand alot while in the oven.
*Place the patties in the oven for 11 minutes ~ I have found this to be the perfect baking time. When you take them out of the oven they WILL NOT LOOK COOKED, it is important to know this because you may think they need to go back in the oven for longer but if you do that the cookies will be hard once they have cooled. TRUST ME! Take them out after 11 minutes and leave them to cool for about 30 minutes.
*While they are cooling I like to get into my comfy clothes, normally my Pyjamas or a onesie and then search for a good movie or series to watch for the evening.
*After 30 minutes your cookies should be ready to tuck in to! Super soft and still a little bit warm ..... PERFECTION!
